    喜歡法國菜,並不是因為不喜歡中國菜,對我來說煮菜,從來都是心的問題,有沒有心,願不願意花時間,有時比材料本身更加重要。喜歡法國菜,我喜歡的是bistro cooking,即是巴黎低下階層的咖啡館所提供的食物,是一般人都能夠接觸到的美食,以最簡單的材料煮出最美味的食物。也喜歡法國人對材料本身的執著,好的材料並不只是貴,而是認真地種出好的菜蔬,認真地養出好的食材,從雞到羊到菜蔬,當中都能看到心和認真。此外,你也會了解到如何食物,如吃牛,並不只是一味追求大和軟質軟悉,有時牛味更加重要。
