    喜歡法國菜，並不是因為不喜歡中國菜，對我來說煮菜，從來都是心的問題，有沒有心，願不願意花時間，有時比材料本身更加重要。喜歡法國菜，我喜歡的是bistro cooking，即是巴黎低下階層的咖啡館所提供的食物，是一般人都能夠接觸到的美食，以最簡單的材料煮出最美味的食物。也喜歡法國人對材料本身的執著，好的材料並不只是貴，而是認真地種出好的菜蔬，認真地養出好的食材，從雞到羊到菜蔬，當中都能看到心和認真。此外，你也會了解到如何食物，如吃牛，並不只是一味追求大和軟質軟悉，有時牛味更加重要。
