This was REALLY interesting! Understanding the science behind cooking (ok, knowing about the science behind cooking, I can't say I actually understand all of it) is really useful and also interesting per se.
The idea deserves 6 stars hands down.
The two middle chapters (on cooking and backing) are extremely interesting. Unfortunately, the rest reads more like a handbook and I often found myself putting down the book and switching to something else. Anyway, everybody who is interested in cooking should have a look at this book.
