Hull is arguably the bible for derivatives. It does cover a broad range of topics and product types. I find it a good starting point for anyone who would like to get an understanding of derivatives, but may not be the best if you would like more detail. It includes some mathematical explanations, but not overly complex so remains quite easy to understand for those without quantitative background. The book seems to be updated regularly so will take into account new product types.
