    別被後半本的純文字食譜給騙了,前面十九章的做菜課題與基本食譜是本書的精華。前面的部分非常的棒,介紹了最基礎的西洋料理手法。我最愛那種由基礎教起,而且把細節都展示出來的,不是單單就說怎樣怎樣做而已,還告訴你為什麼要這樣做。

    和Julia child一樣,Alice Waters投注了一生的熱情在食物與烹飪上,Waters特別提倡使用在地、有機的食材來做菜,才能吃的健康,書中介紹了西式料理的基礎烹飪手法,然後還附上一些富含變化的食譜,對於有志練習西式烹飪的人來說參考價值頗高,很多食譜也是非常吸引人,雖然有些食材可能本地無法取得,不過發揮一些創意應該還是可以用很多台灣現有的食材來代替,只是書中的重量單位還滿微妙,會有不是整數的重量,我想應該是原文用「磅」來計算,在翻譯時就直接換算成接近的公克重了~看起來有些不太適應。其實本書最大的感想是:雖然用橄欖油、蕃茄啥的是有比較健康啦~問題是橄欖油啦糖啦還是一樣半杯一杯的放這樣好嗎~
