    不知何故,也不知何時,蠔隻被認為是壯陽之物,跟生殖拉上關係。《The Big Osyter》提到,最早的記載,是古時羅馬人在狂歡派對中,備有蠔隻作為必食之物;而拿破崙在出發打仗之前,亦會食大量的蠔增加作戰能力。其實蠔隻含有豐富的金屬鋅,而鋅是人體製造荷爾蒙睪丸酮的原素,可能就是這個原因,蠔隻便視作為壯陽之物。

    跟前作不同,Mark Kurlansky的《鱈魚之旅》主要是講鱈魚的歷史以及鱈魚與人的關係,鱈魚就是書的主角,而這本 《The Big Oyster 》則以蠔來側寫紐約的歷史,從食蠔的習慣來看紐約的發展,好像紐約方是這本書的主角。

    紐約位於多條河流入海的交匯,鹹淡水交界,因此適宜蠔的生長,十七世紀的時候,人們徒手已經能夠捕捉大量蠔作食用,漸漸紐約人以捉蠔賣蠔為生。後來科技發展,蒸氣船及其他捕捉工具的發明,令捕捉蠔變得更加容易,蠔的數量大大增加,紐約更成為蠔的出口國,將蠔賣到歐洲的地方,不少蠔商便因此富起來。但後來隨著紐約的發展,紐約的人口大大增加,1898年,紐約人口達二百五十萬,緊次於倫敦為當時世界上第二大的城市。不過衛生問題卻隨之而來,大量未經處理的污水排出紐約海岸,影響蠔的生長,到二十世紀初,在紐約的海岸上,已找不到蠔的蹤影。

    不過,《The Big Oyster》這本書仍有記載有關蠔的有趣資料,例如開一百隻蠔而沒有破壞蠔殼的最快紀錄,為3分3秒,這是在1870年代所創的。食蠔最佳的季節,是沒有R的月份,即九月至四月,因為每年五月至八月的時間,氣候溫暖,最適宜蠔排精繁殖,而蠔隻排精後,身體會細了一個碼,沒有在冬季一般的肥美。
